White Polenta with Roasted Sesame Seeds
In culinary terms, Antarctica has not much to offer - this even Hektor Maille could not change. There was neither food, nor was there much to see or hear - and so the secret agent from Santa Lemusa was more than usually occupied by the mistakes in his eyes and the noises in his ears. The following dish, such as the menu as a whole, is not exactly typical of the everyday life of the Antarctic - but what is daily life at the South Pole?
The way how, in this dish, the little spots of roasted sesame float trough the white polenta, recalls the black threads, that, in the bright light of the Antarctic, irritated more than usual the otherwise sharp eye of the secret agent.
The plate convinces trough the creamy consistency of the polenta and the nutty flavor of the sesame seeds, which in this context is quiet unexpected, but at the same time goes well with the truffled chicken breast «Antarctica».
One can reinterpret this polenta as a simple main course - for example by adding a few strips of veal. Cut the truffle(s) in not too small pieces – ideally about 12.
