Combuse: Spotted sicklefish (1.6 kg) fillet, take of the skin, scrape smaller pieces of meat from the carcass. Rinse fillets and pat dry, chop the smaller pieces into flakes. Heat 1 tablespoon olive oil, sauté 1 chopped onion, 4 crushed and lightly chopped cloves of garlic, 1 deseeded and finely chopped lantern-chilli. Deglaze with 2 dl white wine. When the wine taste is gone, add 500 g of finely chopped tomatoes and 2 dl chicken broth. Add 100 g pitted and halved black shrivelled olives, 65 g well drained capers, 1 teaspoon salt, bring to the boil, reduce heat and let simmer for 1 hour, half covered, stirring occasionally. Add zest of one lemon and fish flakes, salt to taste. Sprinkle salt and pepper over the sicklefish fillets, fry them in a little olive oil for 3 minutes per side. Observations

When we are speeding along our way, the landscape comes to a standstill. But as soon as we decrease the tempo, the world adopts a change, sheds its paralysis, and begins to dance for us.
