Fresh Cheese with Bush-Tomato and Pepper
This dip was served to our agent during his last evening in Darwin. In preparation for his flight to Damascus he downed a Bush menu and some glasses of Shiraz - a secret agent such as Hektor Maille can lose his words but never his appetite or his thirst. The little white sauce has a full aroma, almost as though it is made of ripe cheese. It goes well with some raw vegetables or a slice of bread or crackers.
2 EL sour light cream
2 tablespoons fesh cheese
3 teaspoons Bush-tomatoe, ground
1 teaspoons Tasmanian pepper leaves
1 pods garlic, pressed
½ teaspoon salt
Some drops of classic red Tabasco pepper sauce
As a variant you can add some basil leaves to the dip, finely chopped, or better still, torn into pieces.
