Spicy Glass Noodle Salad
This glass noodle salad belongs to the classics of Thai street cuisine. It is served in various forms – sometimes with minced pig liver or fresh shrimp, at other times with different types of sauces, simple and elaborate. Here, we reproduce a recipe used by Lun, Raina and Gobli's cook, who prepared this salad one evening in Bangkok under the observant gaze of secret agent Hektor Maille.
A particular attraction of this salad is that it can be served luke-warm, which in our opinion, optimises its aroma.
1 tablespoon rapeseed oil
100 g pork mincemeat
1 teaspoon white pepper, ground
1 snall teaspoon shrimp paste
3 tablespoons lime juice (1 lime)
2 EL fish sauce
1 teaspoons palm sugar (or white sugar)
4 chillies of the Bird's Eye type, stalk removed and finely chopped (if they are very small take 8)
1 or 2 pods garlic, pressed
1 heaped tablespoon dried shrimps (big red ones without head as they can be found easily in Asia-Shops)
100 g glass noodles
1 grosse tomato, deseeded and cut in stripes
3 tablespoons spring onions, chopped
For the decoration some leaves of basil Horapa and red chillies

Die lukewarmly effect is kept better if the noodles are put in a slightly preheated salad bowl.
